- vinification

The different varieties of grape are harvested and vinified separately. The fermentation is carried out at 25°C in temperature controlled steel storage tanks. The maceration of the grape skins lasts for 15-20 days during which time the wine undergoes 3 pump-overs every day. The wine is refined for 12/18months in Barriques and oak barrels and then 6 months in bottles.
