Dark, deep, ruby red color. Complex nose that immediately overwhelms us with a sumptuous arsenal of scents. Dark (mostly black) fruit, hints of leather, cocoa, tobacco and southern spices. Firm but nicely balanced mouthfeel. Here too, its rich complexity is emphasized once again. The finish is long and impressive.
This robust and complex wine calls for hearty dishes with a lot of flavour. Grilled red meat, lamb chops, Mediterranean, spicy stews, hearty but fine game such as buck and doe and strong-tasting matured cheeses.
- climate
-
Both Sicily and Salento have a Mediterranean climate with warm dry summers and mild winters with limited precipitation.
- soil
-
Primitivo from Salento: Brick red soil with limestone underneath. Syrah and Merlot from Sicily: Poor soils with lime and clay.
- vinification
-
A blend of Primitivo (60%), Syrah (35%) and Merlot (5%). The grapes grow according to the Alberello method whereby the grapes are not guided but the plant grows completely as it would in the wild. Grapes are picked and fermented separately. The blend is then made and the wine matures further in stainless steel.
