Dolcetto is very versatile in the kitchen. It is a fairly gentle companion of various meat dishes, pasta, tapas, fondue and soft cheeses.

The climate of Barbaresco is classified as warm and temperate with regular and sometimes a lot of rainfall. Rain falls regularly even in the driest month. Both the mountains and the Mediterranean sea leave their mark on the region.

Southwest oriented vineyard that is situated in the part of Rio Sordo at an altitude of 230-260m. White soils with lots of limestone and regular layers of clay.

Hand-picked grapes that are gently pressed. Short maceration of 5-6 days under controlled temperature (23-25 °). This is followed by malolactic fermentation to give the wine more stability. The wine then rests for several months in stainless steel tanks, after which it matures for another two months in wooden barrels of 40 hectoliters in order to achieve the best balance.
