Light red color tending to ruby red color. Fine, smoky onset with aromas of cherries, cherries and a hint of raspberry. Delicate mouthfeel in which the aromas of the fruit still persist. Nice balance between fruit and structure. Dry but mild finish.
Veal, pork fillet, poultry or as an alternative to white wine with fried or grilled fish. If necessary pour cool.

The soil of Chavignol is dominated by the famous limestone and clay deposits from the Kimmeridgian era. The same substrate that also ensures a fresh and mineral character in Chablis.

Grapes are picked by hand. 4 days of maceration carbonique to extract more fruit. Fermentation at low temperature. Short ripening in the bottle before selling.
