Light ruby red. Cherry spice bouquet. On the palate this Haka is smooth, cherry and strawberry, smooth tannins and soft acidity.

Lovely with duck, red meat, oily rich fish such as salmon, salads and cheese.

climate

Late Spring frosts or early Autumn frosts. Over the summer period the days are warm (25-30C) without being overly hot, and in the evening the temperature drops considerably.

soil

The Wairau is blessed with free draining gravel and silt, with natural low vigour.

vinification

Grapes were picked in the cool of the night. Immediately transferred to the winery, all grapes were immediately pressed into stainless steel tanks. The juice was then cold settled for 24 hours, clear juice was transferred off gross lees then an aromatic strain of yeast was added. A long slow fermentation then took place, followed by a period on fine lees prior to blending, filtering and bottling.
